Ingredients

3 large green bell peppers, sliced fine
2 large potatoes, cooked and cubed
1 large onion, chopped
1 large tomato, diced
10 fresh coriander leaves
1 tablespoon ginger paste
1 tablespoon garlic paste
2 teaspoons ground turmeric
1 teaspoon red chili flakes or to taste
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon sea salt
2 tablespoons vegetable oil
½ cup water


Directions

Over medium-high heat, add oil into a large frying pan, sauté onions, tomatoes, ginger, coriander leaves, and garlic, together with cumin and coriander powders for five minutes. Add remaining ingredients, and cook on medium heat for 15-20 minutes or until potatoes are soft. Serve over rice.
