South Sudan Bamia Rice Recipe
Bamia is a flavorful rice dish from South Sudan that is made with rice, beef, okra, tomato paste and a variety of fresh spices.
Ingredients
2 cups basmati rice
1 pound beef, cubed
1 pound fresh okra, sliced
1 large onion, chopped
3 cloves garlic, minced
2 tablespoons tomato paste
1 tablespoon ground cumin
1 tablespoon ground coriander
1 tablespoon ground turmeric
Salt and pepper, to taste
4 cups water
Vegetable oil, for cooking
Directions
Rinse the rice in cold water several times and soak it in water for 30 minutes. In a large pot or Dutch oven, heat the oil over medium-high heat. Add the beef and cook until browned on all sides, about 5-7 minutes. Add the onions and garlic to the pot and cook until the onions are translucent, about 5 minutes. Add the tomato paste, cumin, coriander, turmeric, salt, and pepper to the pot and stir to combine. Add the okra to the pot and stir to coat with the spices. Add the water to the pot and bring to a boil. Reduce the heat to low and simmer for 30 minutes, or until the beef and okra are tender. Drain the rice and add it to the pot. Stir to combine with the beef and okra mixture. Cover the pot and simmer for 15-20 minutes, or until the rice is cooked and fluffy. Fluff the rice with a fork and serve hot.
