When using almond milk in this recipe, keep in mind almond milk has fewer fats than whole milk, so the pie might be slightly less rich but still creamy. If you rather use whole milk, then increase the amount to 1/2 cup instead of the 1/3 cup of almond milk.

Almond Milk Sweet Yam Pie

2 1/2 cups mashed yams

1 cup brown sugar 

1/4 cup white sugar

1/3 cup almond milk

1/2 cup butter

1/2 teaspoon nutmeg

1/2 teaspoon cinnamon

1 teaspoon vanilla

1 teaspoon orange blossom water

1 teaspoon baking powder

3 large chicken eggs

1/2 cup nuts (optional)

1 unbaked pie shell, 9-inch


Directions 

While the yams are still warm, add sugar, butter, and milk. Blend well. Whisk eggs in a separate bowl. Add eggs and blend well again.


Stir in vanilla, orange blossom water, baking powder, spices, and nuts (if using). Pour the mixture into the pie shell.


Bake at 425°F for 10 minutes. Reduce the oven temperature to 325°F and bake for 35 minutes longer.
